I love it when something comes together so perfectly (especially when I know it comes from some leftover ingredients I had on hand and a bit of ingenuity!)
This pasta dish can make even the pickiest of us absolutely delighted with each bite. Oh, and did I mention it pairs really nicely with a glass of pinot Grigio.

A bottle of Cantina Zaccagnini Pinot Grigio 2021 was my pairing choice.
My husband has never really been a pasta fan, but I, on the other hand, would choose it as my main meal on a deserted island. Don’t worry; this dish is so good they’ll return for a second bowl, even if they aren’t pasta fanatics. I love how much variety a pasta dish can give you, and it’s often a quick dish when you’re short on time.
Those of us with CSID know how difficult it is to find food we can eat, but it’s even harder to add variety to our meals since we’re so limited in our choices. So, drink that extra glass of wine. I won’t tell, and let’s stop wondering what we’re having for dinner tonight.
