Almond Flour Pancake Bites

So, as I’m returning to university for nutrition and food science, I realize how essential breakfast is! If I don’t eat breakfast each morning, I start to feel sluggish by lunchtime, and it’s just a downhill battle from that point of trying to feel nutritionally balanced and alert.

We all know how hard it is to manage our CSID diets as it is, but as you can imagine, there isn’t much choice on campus unless I pack my food source.

I came up with a foolproof plan to make sure I get breakfast, and it’s in the form of these cute little pancake bites!

(And yes, you can freeze them, then thaw them out and pop them in the microwave in the morning for a few seconds.)
