Since being diagnosed with CSID I felt like I had to give up quite a lot of treats I really loved, but I also found that I didn’t really have to give them up I just had to take the time to learn how to make things with ingredients that I could have.
I started out with easy stuff like chocolate chip cookies and worked my way up to being able to bake breads and pizza dough and even my absolute favorite blueberry muffins!
So that’s why with Thanksgiving quickly approaching I thought I’d put a holiday twist on my favorite muffin recipe.
If you’re not sure what to do with all those cranberries you’re seeing in the store, and you’re not really a fan of cranberry sauce
(Hint: I’m doing a cranberry sauce recipe share in the near future.)

First, let’s talk about how nutritionally valuable a cranberry really is!
Cranberries are a nutritional powerhouse packed with health benefits. These vibrant red berries are rich in antioxidants, particularly flavonoids and polyphenols, which are crucial in neutralizing harmful free radicals in the body, potentially reducing the risk of chronic diseases.
They are also a good source of vitamin C, perfect for these long winter months when we’re prone to getting colds and other viruses.
Cranberries also contain fiber, supporting digestive health. They are associated with a lower risk of urinary tract infections due to their unique compounds that may prevent bacteria from adhering to the urinary tract walls. Incorporating cranberries into your diet adds a burst of tart flavor and delivers a range of nutrients that contribute to overall well-being.
Also, I wanted to take a minute to talk about sparkle sugar and muffins, which just kind of go hand in hand in my opinion. I am such a sucker for anything that glitters or sparkles but unfortunately trying to find sparkle sugar with something like CSID is basically impossible. So, my alternative is to use this maltodextrin edible glitter. I only had pink available at my house which is why I used gluten-free oats as a topping instead, but I really do love the versatility of edible glitter!
